Growing Herbs
Most herbs like full sun (minimum six hours) and well drained soil. The use of windbreaks such as building walls, hedges, and other garden features will help to protect your herbs from winter wind kill.
Raised beds ensure good drainage and warm up faster in the spring. Use generous amounts of compost, peat moss, and well composted manure to improve the soil.
During hot weather herbs should receive at least one inch of water per week.
Prune herbs on a regular basis to improve air circulation around the plants, preventing fungal disease.
Mulch your herb beds to eliminate weeds, retain moisture, and protect the herb roots in the winter. Check zone ratings to determine which herbs will over winter and those annual herbs that you will have to replant in the spring.
Many herbs have culinary and medicinal uses, while others provide cut flowers.
Wait to harvest your herbs until the plant has reached sufficient growth to withstand cutting. Ideally, herbs should be harvested mid-morning, after the dew has dried, but before the sun can wilt them. Harvesting just before the plant flowers ensures the highest level of flavor, since that is when essential oils are at their peak. Refrain from major pruning of perennial herbs 45 days prior to the first hard frost. This will allow new growth to harden off and enable the plant to store up energy for winter.
